Out of ideas to surprise your other half on this Valentine’s day? To prepare a romantic dinner is always a winning idea. In this article, our chef Nuno Ferraz, gives you a hand to help you shine with an easy and quick recipe but with all the necessary aphrodisiac ingredients required on a night like this one.

Duck breast with chocolate and ginger sauce and creamy parmesan polenta

You will need:

  • 240 gr duck breast
  • 80 gr butter
  • 2 garlic gloves
  • 1 spring of thyme
  • 60 gr polenta flour
  • 10 gr chopped onion
  • 5 gr red chili pepper
  • 10 gr ginger
  • 10 gr cream
  • 20 gr grated parmesan cheese
  • Q.b salt
  • Q.b. black pepper
  • Q.b. chopped chives

Preparation:

  • Melt the chocolate with the cream and 1 Tbs of butter in a low simmer double boiler. Reserve;
  • Grate the ginger and add to the chocolate; keep it at room temperature;
  • In a pan, brown the butter and the onion, add the flour and stir; season with salt, add boiling water little by little and let it cook like creamy rice;
  • In the end, rectify the seasoning, add the parmesan cheese, butter and chopped chives;
  • Make a cross-cut in the skin of the duck breast without reaching the meat; season with salt and Pepper;
  • In a frying pan, not too hot, place the breast skin down and let the fat slowly melt. Drain the fat from time to time;
  • Turn the breast, add butter, smashed garlic cloves and thyme. Let it cook for 4 minutes adding the reserved fat from time to time;
  • When done, let the meat rest for 2 minutes and slice it, covering with the chocolate sauce;
  • Serve with creamy polenta.
